Poached Eggs with Peach Salsa | A Paleo Breakfast

This is a great Paleo recipe for anyone looking to try out that diet and healthy living!

Easy Paleo Recipe!

2 Eggs
Linseed Oil
2 Tablespoons of Peach Salsa

Making the Peach Salsa
1 cup peeled & chopped peaches
1 forth cup of chopped red onions
1 forth cup of chopped green peppers
1 tablespoon of lime juice
2 teaspoon of cilawntro
Pepper for taste
Stir everything together in a bowl
Cover & chill for up to 6 hours. This recipe makes 2 cups

Step One:
Bring 1/2 inch of water to boil in a saucepan

Step Two:
Rub a small amount of oil in the wells of an egg poacher

Step Three:
Crack eggs into the poacher and reduce heat to a slow boil

Step Four:
Place the poacher in the saucepan and cover

Step Five:
Large eggs take about 8 minutes
for soft yolk
Medium eggs take about 6 minutes

Step Six:
Remove the egg from the pan & put
it on a plate
Smother with the peach salsa
